Barbara's Matrimonial Cake

Whenever we visit my lovely friend Barbara we get treated to her special bake! These delicious squares of date infused flapjacks are happiness in a bite size!
Discover the history of a few old crumbs sticking together after a few dates - but you really do not have to be married to enjoy Matrimonial Cake!

Matrimonial Cake
Ingredients:

175g plain flour
1 teaspoon bicarbonate of soda
125g rolled oats
2 teaspoons lemon juice
225g soft brown sugar
225g melted butter

Filling:
225g dates
2 level tablespoons soft brown sugar
1 teaspoon lemon juice
1/2 pint cold water - approx


Method:
Grease a 22cms square pan and line with baking parchment and begin by making the filling
Step 1 - chop dates and put in a pan with the sugar, lemon juice and enough water to cover.  Bring to a boil and simmer gently until thick and smooth .  Cool before use.

Step 2 - sift in the flour and bicarbonate of soda.  Add oats, lemon juice, sugar and melted butter and stir with a fork until mixed.  Press half the mixture into the tin, spread with the date filling and cover with the remaining crumb mixture and pat down lightly.

Step 3 - Bake in the oven 170c or 150 fan  for 30 - 40 minutes until golden brown and firm - cool, cut into squares and enjoy!
