Lemon Drizzle Cake
Ingredients:
225g unsalted butter
225g caster sugar
4 eggs
225g self raising flour
1 lemon zested and juiced
Decoration:
Lemon curd
2 blocks blue icing
1 block yellow icing
Red food colouring
Sugar paste letters - eBay
Number 7 mould - eBay
Method:
Step 1 - heat oven to 160fan or equivalent
Step 2 - beat together butter and sugar then add the eggs
Step 3 - gently fold in flour and zest and mix until well combined
Step 4 - grease your mould well - no need to line if using a silicone mould
Step 5 - bake for 45 minutes until golden brown and skewer comes out clean
Step 6 - when cool prick holes and drizzle in the lemon juice
Decoration:
I doubled this recipe - and moulded them together using lemon curd to seal. The icing is so easy to roll dusted with a bit of icing sugar on a board then mould to the cake and decorate as you wish. Pipe along the bottom to seal any gaps or just to add a bit more interest!
It takes patience but is not difficult - I loved using the mould - super easy and this cake is the perfect base for taste and gives enough structure to ice!
