img_2157.jpeg

Today we celebrate Winnie The Pooh Day and how better than with my Winnie The Pooh Spiced 'Hunny' Loaf! Perfect for a picnic with friends in the 100 Acre Wood! My recipe this week on Lawrie's Lifestyle Show 12-3pm - Jill

WINNIE THE POOH’s SPICED ‘HUNNY’ LOAF
Ingredients:

100g salted butter
100g light brown sugar
100g runny honey
1 large egg
100ml milk
1 tsp mixed spice
1/2 tsp ground ginger
150g Self raising flour

For the glaze
25g salted butter
25g runny honey

METHOD:

Step 1  - Heat oven 180c/160 fan/gas 4.  Butter and line a 900g loaf tin with baking parchment.  Beat the butter and sugar together with a mixer until creamy.  Whisk in honey, egg, milk and spices - it may look a bit curdled but don’t worry - then fold in the flour.

Step 2 - Tip into tin and bake for 45 mins or until skewer is clean. Leave to cool on wire rack.

Step 3 - Melt butter and honey in a pan until smooth then cool completely until thickened then drizzle over and leave to set before serving!
No more Rumbly in my Tumbly! Said Pooh 😂
